From North of the Boulevard~
Sometimes a lazy Sunday afternoon calls for a little baking. I wasn’t sure what I was going to bake, but after looking through my pantry, I decided to make cake brownies and try something new with my standard cream cheese frosting. I’m happy to say the result was delicious!
I didn’t have any brownie or cake mixes, so it was time to pull out an old family cookbook and use a recipe that I’ve used in the past. It’s an easy one and you’ll have a cake like brownies once it’s done.
1/2 cup of butter, melted
3/4 cups of all purpose flour
1 cup sugar
4 TBS unsweetened cocoa powder
1/2 tsp salt
1/2 tsp baking powder
1 tsp vanilla extract
Pre heat oven to 350
Prepare 9 x 9 pan for baking. I use Wilton’s Cake Release.
Add sugar, melted butter and cocoa and beat on medium until blended
Add flour, salt and baking powder and continue beating on medium until well blended
Add vanilla and beat for 1 minute
Pour into prepared pan
Bake for appx 20 minutes. Test for doneness with toothpick.
Allow to cool completely before frosting. If you plan on removing it from the pan for frosting, turn it out onto a wire rack after five minutes. I removed this one from the pan so that I could frost the sides. More frosting is always better than less!
To make the frosting, I used my basic cream cheese frosting, but I decided to add some marshmallow cream to it this time.
Marshmallow/Cream Cheese Chocolate Frosting
1 8 oz package of cream cheese, softened
3/4 cup of butter (not margarine)
5-6 cups of powdered sugar
1/2 cup unsweetened cocoa
1/2 cup semi-sweet chocolate chips
1 7 oz jar Kraft Marshmallow Creme
1/2 cup chopped nuts if desired
Beat the cream cheese and butter on medium speed for two minutes.
Reduce speed to low and add sugar, 1/2 cup at a time.
After all the sugar has been added, add cocoa and beat on medium until blended.
Add melted chocolate chips and Marshmallow Creme.
Beat until it reaches the desired consistency.
If frosting is too thick, add a small amount of milk. If it’s too thin, add more sugar.
Frost generously and slice and serve. I sprinkled cashews on the top.
