Sometimes, a basic recipe can be one of the best. That’s just what the pasta shell salad is. Made with four ingredients, it easy and tasty. It is not one that I’d put on any healthy salads list, but I would include it on a great summer salad list.
This happens to be one of Gloria’s favorite side dishes and since she was coming over for dinner and I wanted to make another salad for the Summer Salads Party, it was the perfect time to make it.
Pasta Shells 3/4 box, boiled and drained
1 Bell Pepper, diced
3 boiled eggs, chopped
3 TBS Mayonnaise
Salt, Pepper, Paprika to taste
Boil pasta until tender
Drain in colander and run cold water over pasta
Boil eggs-add eggs to small pot and allow to come to a boil. Set timer for 15 once water is boiling.
Dice bell pepper
In a large mixing bowl, mix pasta with mayonnaise and stir.
Add in eggs and bell pepper and mix well.
Add salt and pepper to taste and stir.
Scoop salad into a serving bowl and sprinkle with paprika.
Chill for at least one hour.
Simple, quick and tasty. It’s a great alternative to potato salad because it takes so much less time to make it.
