This orange pound cake is a tasty twist on traditional pound cake. It was a try it and see recipe that I hoped would turn out well. I was delighted that it did! It’s easy to make and takes only a few minutes to put together.
You know those times when you want to make something sweet, but you have no real plan? After taking a look inside my pantry and refrigerator, I decided to try a pound cake from a box of butter cake mix. I googled a bit to find some recipes for making one, but many of them called for adding pudding. Of all of the items in my pantry, pudding was not one of them. So, it was time to just put together some ingredients and hope for the best!
Duncan Hines Butter Cake Mix
1/2 Cup of Sugar
1/4 cup of Vegetable Oil
1 Stick of Butter
8 oz Tub of Sour Cream
2 TBS Orange Extract
1 Cup of Powdered Sugar
3 TBS Orange Juice
1 TBS Orange Extract
Preheat oven to 325.
Prepare bundt pan with cooking release spray. I use Wilton’s. It works great every time.
Using a large mixing bowl, combine sugar and butter. Mix on high until blended.
Add oil. Mix. Add eggs. Mix. Add orange extract. Mix. Add cake mix.
Continue mixing on medium for two minutes.
Fold in the sour cream, using a wooden spoon.
Pour the batter into prepared pan. Cook for 1 hour. Allow to cool before removing it from pan onto a cake plate.
While the cake is baking, prepare glaze by whisking together powdered sugar, juice, and orange extract in a small bowl. Whisk for about one minute or until it is the desired consistency. Add more powdered sugar if you want a thicker glaze.
After the cake cools, transfer it to a cake plate and pour the glaze over the top, allowing it to spread down the side of the cake. I tucked a few paper towels beneath the cake to avoid having a large pool of glaze around the bottom. It doesn’t catch it all, but it does make it a little less messy.
I wasn’t sure that this was going to be a recipe that I would share on the blog, so I didn’t take many photos along the way. It wasn’t until after I had a slice of it that I thought you all might enjoy the recipe!
I enjoyed it with the glaze, but you could easily use a cream cheese frosting instead.
Sometimes, it’s fun to just experiment a little without a recipe!
